INGREDIENTS YOU’LL NEED:
The ingredients listed below are compliant with gluten-free and vegan diets, but feel free to substitute with regular ingredients if that’s not your thing!
Mac and cheese:
-1 8-12oz. package of brown rice elbow pasta
-1 garlic clove
-1 1/2 cups raw cashews
-1/4 cup nutritional yeast
-3/4 cup water
-3 tbsp. fresh lemon juice
-1 tsp. dijon mustard (regular yellow works too!)
-1 tsp. chili powder
-Pinch of cayenne pepper
-Pinch of turmeric
-1 cup washed, sliced mushrooms
-Bread crumbs
**Having almond milk on hand is really helpful as the sauce can be a bit thick and the milk gives it a great creamy texture. I highly recommend adding in a splash!
For roasted broccoli:
-Broccoli
-Olive oil
-Salt and pepper to taste
-Garlic seasoning (optional)
